Cocktail

Method

Cocktail

  1. 1

    Prepare glass

Chill a coupe or martini glass in the freezer for at least 5 minutes or fill with ice water while you prepare the cocktail.

  2. 2

    Absinthe rinse

Pour a small amount of absinthe into the chilled glass (about 1/8 tsp). Swirl to coat the inside, then discard excess or pour out — you want only a thin aromatic coating.

  3. 3

Dry shake (if using egg white)

In a cocktail shaker, add gin (or vodka), green Chartreuse, lime juice, simple syrup, cucumber juice, apple liqueur and egg white (if using). Dry shake vigorously without ice for 10–15 seconds to emulsify and create foam.

  4. 4

    Wet shake

Add ice to the shaker (about 6 ice cubes) and shake hard for 12–15 seconds until the shaker is cold to the touch and well chilled.

  5. 5

    Double strain

Double-strain the cocktail into the absinthe-rinsed chilled coupe using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any cucumber solids, producing a silky texture and smooth foam (if egg white used).

  6. 6

    Garnish and finish

Float the cucumber ribbon along the surface or thread it around the inside of the glass. Place the lime wheel on the rim or float it. Sprinkle a pinch of edible gold flakes over the foam for a lucky, money-inspired sparkle. Serve immediately.
