Cloud Base & Citrus Foam

    Bloom gelatin

    Sprinkle the unflavored gelatin over the 2 tablespoons cold water in a small bowl. Let sit 5 minutes to soften (bloom).

    Warm gelatin

    After blooming, microwave the gelatin for 10–15 seconds or warm gently on the stovetop until fully dissolved. Set aside to cool slightly (do not let set).

    Whip cream mixture

    In a chilled mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Whip with a hand mixer until soft peaks form (about 2–3 minutes).

    Fold in dairy and gelatin

    Whisk together the whole milk and Greek yogurt in a separate bowl until smooth. Stir in lemon zest and fresh lemon juice. Slowly drizzle the dissolved gelatin into the milk-yogurt mixture while whisking to combine. Gently fold this mixture into the whipped cream until uniform and fluffy but not runny — you want a light, cloud-like texture.

    Chill

    Cover and refrigerate the cloud base for 20–30 minutes to let it set slightly into a stabilized cloud foam. It should be spoonable and hold soft peaks.

Sunset Fruit Compote

    Prepare fruit

    Put the diced mango, peach, and strawberries into a medium saucepan. Add the granulated sugar, orange juice, lemon juice, and orange zest.

    Cook compote

    Over medium heat, bring the fruit mixture to a gentle simmer. Cook, stirring occasionally, until the fruit softens and releases juices and the mixture thickens lightly — about 8–10 minutes. Use a spoon to break down larger pieces, leaving some texture. Taste and adjust sweetness with a little more sugar if desired.

    Cool compote

    Remove compote from heat and let cool to room temperature. The warm orange and peach notes should evoke sunset flavors.

Crunch & Garnish

    Toast almonds

    In a small dry skillet over medium heat, toast the almond flakes until fragrant and lightly golden, 2–3 minutes, shaking the pan to avoid burning. Remove from heat and let cool.

    Honey drizzle

    Warm the honey briefly (10 seconds in microwave) so it flows easily for drizzling.

    Assemble

    Spoon about 3 tablespoons of the chilled cloud base into each of 4 serving glasses or small bowls (servings: 4). Top each with 2–3 tablespoons of the sunset fruit compote, then another 1–2 tablespoons of cloud base to create layered 'clouds' and 'sunset' streaks. Sprinkle each with toasted almond flakes, a light drizzle of warm honey (about 1 teaspoon per serving), and garnish with 1 edible flower and 2 micro-mint leaves for brightness. Serve immediately so the cloud remains light and airy.

    Make ahead & serve

    You can make the compote and cloud base up to 24 hours ahead. Store separately in airtight containers in the refrigerator. Toasted almonds and honey should be added just before serving for the best texture.
