Muddle and build

In a mixing glass or shaker, add the fresh mint leaves and simple syrup. Gently muddle the mint just enough to release the aromatic oils — about 6–8 light presses. Avoid pulverizing the leaves.

Add spirits and acid

Add the vodka and fresh lime juice to the mixing glass with the muddled mint and simple syrup. Add a couple of dashes of Angostura bitters.

Shake with ice

Add a handful of ice to the shaker (enough to chill quickly), cap it, and give it a quick, firm shake for about 8–10 seconds to chill and briefly dilute the mixture.

Prepare glass

Fill a highball or Collins glass with crushed ice to the top. If desired, run a lime wheel around the rim for extra aroma and then drop it into the glass.

Strain and top

Strain the shaken vodka–mint mixture over the crushed ice. Top with the cold ginger beer (about 4 oz), pouring gently to preserve carbonation. Stir once very gently with a bar spoon to integrate the ginger beer without flattening it.

Garnish and finish

Add a sprig of fresh mint on top and a lime wheel on the rim or float it on the drink. If you like, add an extra dash of Angostura bitters on the foam or top for aroma. Serve immediately with a straw.
