Method
Prepare Smoked Honey Syrup

Add Smoke
Place the warm syrup in a shallow dish. Using a smoking gun or a small culinary torch and a piece of wood chip, briefly introduce smoke over the syrup and cover with a bowl for 3–5 minutes to infuse. If you don't have a smoking tool, char a small piece of rosemary or a cinnamon stick and drop briefly into the syrup, then remove.
Build the Cocktail

Chill an old-fashioned glass by filling it with ice or placing it in the freezer while you prepare the drink.

Add 2 dashes Angostura bitters and 1 dash orange bitters to the mixing glass.

Stir the mixture briskly with a bar spoon for 20–30 seconds until well chilled and slightly diluted (aim for a cold, satin texture).

Discard the ice from the chilled old-fashioned glass and place a large ice sphere or block inside.

Strain the stirred cocktail over the large ice in the old-fashioned glass.

Carefully float 0.25 oz blackstrap rum atop the drink by pouring it slowly over the back of a bar spoon so it remains as a thin dark layer on the surface, creating a brooding top note.

Express the oils from a grapefruit peel over the surface of the cocktail by holding the peel over the glass and giving it a sharp squeeze, then run the rind around the rim and drop it into the drink.

If using the charred rosemary sprig, briefly flame or char the tip of the sprig over an open flame (or torch) and then wave it above the cocktail to impart a smoky, ashy aroma; optionally rest it on the ice as a garnish.

Serve immediately with a warning: 'The Send is Near' — enjoy slowly, appreciating the layered bitterness, smoke, and sweet undercurrent.
