Base Cocktail

Prepare ingredients
Measure and chill the rums and liqueur. Juice fresh limes and lemons; strain if pulp is undesired.

In a cocktail shaker, add white rum, dark rum, fresh lime juice, fresh lemon juice, house simple syrup, and orange liqueur.

Add a small handful of ice to the shaker (enough to chill quickly but not overly dilute) and cap the shaker.

Shake vigorously for 10–12 seconds until the outside of the shaker becomes cold and slightly frosted.

Fill a highball or Collins glass with the cracked ice (about 1 cup).

Strain the shaken cocktail over the cracked ice, leaving about 1 inch of headspace in the glass.

Top gently with chilled ginger beer (about 3 oz). Pour slowly to preserve effervescence and avoid overflowing.

Add 2 dashes of Angostura bitters over the top — they will sink and swirl through the drink, adding aromatic complexity.

Garnish with a sprig of mint (slap it once between your palms to release aromatics) and a lime wheel or wedge on the rim. Optionally give the lime wedge a quick squeeze over the drink before dropping it in.

Serve with a straw and a long stirring spoon so the guest can adjust strength and sweetness. Encourage a gentle stir before the first sip to marry ginger beer with the shaken base.
