    Assemble spread

    In a small bowl combine Dijon mustard and mayonnaise until smooth. This will be the interior spread for the sandwich.

    Prepare bread and cheeses

    Arrange the two slices of sourdough on a clean work surface. On one slice, spread half of the mustard-mayo mixture evenly. Top that slice with shredded sharp cheddar (allotted portion ~3/4 cup) then layer the roast beef evenly over the cheese. Spoon the caramelized onions over the beef. On the other slice of bread, spread the remaining mustard-mayo, then top with the shredded Swiss cheese (about 1/2 cup) so the cheese faces inward when you close the sandwich.

    Add optional peppers

    If using, scatter the pickled jalapeños or banana peppers over the onions for brightness and heat, then press the two bread slices together to form the sandwich.

Butter & Searing

    Prepare flavored butter

    In a small bowl combine softened unsalted butter, olive oil, garlic powder, and freshly ground black pepper. Mix until fully incorporated into a spreadable compound butter.

    Butter the outside

    Using a knife or spatula, spread the compound butter evenly over the outside faces of both slices of sourdough (the crusts included). This will help the sandwich crisp and brown.

    Pan-sear the sandwich

    Heat a large skillet or cast-iron pan over medium-low to medium heat. When the pan is hot, place the sandwich in the skillet. Cook gently for 3–4 minutes per side, pressing down slightly with a spatula, until the bread is golden brown and crisp and the cheeses have melted. If the bread browns faster than the cheese melts, lower the heat and cover the pan for a minute to encourage even melting without burning the crust.

    Rest and garnish

    Transfer the sandwich to a cutting board and let it rest for 1 minute. Slice in half diagonally. Sprinkle chopped parsley over the top if desired and serve immediately.
