    Rinse quinoa and wild rice under cold water. In a medium saucepan, combine quinoa and wild rice with 4 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until grains are tender and water is absorbed. Remove from heat and let sit for 5 minutes before fluffing with a fork.

    Season the trout fillets with salt and pepper. In a skillet over medium heat, add olive oil. Cook trout for about 4-5 minutes on each side or until cooked through and flaky. Remove from heat and let cool, then flake into large pieces.

    Shred the carrots and red cabbage, thinly slice the red onion and cucumber, and chop the avocado.
