    Cook the Grains

    In a medium saucepan, bring 2 cups of water to a boil. Add quinoa and wild rice, reduce heat to low, cover, and simmer for 15-20 minutes until grains are tender. Remove from heat and let stand for 5 minutes. Fluff with a fork.

    Make the Dressing

    In a bowl, whisk together the yogurt, chopped cilantro, lemon juice, minced garlic, salt, and pepper until smooth. Adjust seasoning to taste.

    Prepare the Vegetables

    While the grains are cooking, shred the carrots and red cabbage, thinly slice the red onion, and dice the cucumber. Slice the avocado just before serving.

    Combine Ingredients

    In a large bowl, combine the cooked quinoa and wild rice, shredded carrots, red cabbage, red onion, and cucumber. Drizzle with cilantro yogurt dressing and toss gently to combine.

    Spoon the mixture into bowls, top with slices of avocado, slivered almonds, and sultanas. Enjoy!
