Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit for 10 minutes, then transfer to a bowl.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Allow the rice to cool to room temperature.

Prepare the Filling
Shred the imitation crab meat into bite-sized pieces. Thinly slice the green onions. In a bowl, combine the crab meat, green onions, and sesame seeds. Set aside.

Assemble the Roll
Place a nori sheet on a bamboo sushi mat. Wet your hands and evenly spread a layer of sushi rice over the nori, leaving a 1-inch border at the top. Place a few shiso leaves and a line of the crab mixture along the bottom edge of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge of the nori with a bit of water.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce and wasabi on the side.
