Method

Cooking the Steak

    Prepare the Steak

    Season the steaks with salt and black pepper on both sides.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Making the Fries

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips.

    Fry the Potatoes

    In a large pot, heat vegetable oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Preparing the Salad

    Make the Salad

    In a large bowl, combine arugula, cherry tomatoes, olive oil, balsamic vinegar, salt, and black pepper. Toss to combine.

Making the Demi Glaze

    Prepare the Glaze

    In the same skillet used for the steak, add red wine and beef stock. Bring to a boil and reduce heat to simmer until the sauce is reduced by half. Stir in butter and thyme, and season with salt to taste.
