Fries Preparation

Prepare the Potatoes
Peel the russet potatoes and cut them into thin fry shapes. Soak them in cold water for at least 30 minutes to remove excess starch.

Add Milk and Cheese
Gradually whisk in the milk until smooth, and bring to a simmer. Stir in the Gruyère cheese until melted and smooth. Season with nutmeg, salt, and black pepper.
Jalapeño Aioli Preparation

Mix the Aioli
In a bowl, combine mayonnaise, chopped jalapeño, minced garlic, lemon juice, and salt. Mix well and adjust seasoning to taste.
