    In a large pot, cook the Berryman Farms bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.

    Add sliced yellow onions to the pot and sauté in the bacon fat on low heat for about 30 minutes, stirring occasionally until caramelized and golden brown.

Building the Soup

    Deglaze the Pot

    Pour in the dry white wine and scrape the bottom of the pot to deglaze. Let it simmer for about 5 minutes.

    Add Broth and Seasoning

    Add beef broth, fresh thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.

    Prepare Cheese and Croutons

    While the soup simmers, prepare the croutons by toasting them until golden brown. Mix the raclette, gruyère, and mozzarella cheeses together.

    Assemble and Serve

    Remove bay leaves from the soup. Ladle soup into oven-safe bowls, top with croutons, and sprinkle the cheese mixture on top. Place under a broiler until cheese is melted and bubbly.
