Preparation Steps
- 1
Prepare the Chicken
Preheat the oven to 400°F (200°C). Season the chicken breasts with salt and black pepper. Dredge each chicken breast in flour, shaking off the excess. Dip them in beaten eggs, then coat with breadcrumbs.
- 2
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook until golden brown, about 5-7 minutes per side. Transfer to a baking dish.
- 3
Make the Sauce
In the same skillet, add minced garlic and cook until fragrant. Add the San Marzano tomatoes and dried oregano. Let it simmer for 10 minutes until slightly thickened. Stir in fresh basil.
- 4
Assemble the Dish
Pour the sauce over the chicken breasts and sprinkle generously with Parmigiano-Reggiano cheese.
- 5
Bake
Bake the chicken in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.
- 6
Cook the Fettuccine
While the chicken is baking, cook the fresh fettuccine according to package instructions. Drain and set aside.
- 7
Serve
Place the baked chicken and sauce over the cooked fettuccine and garnish with additional Parmesan cheese and fresh basil.
