    Cook the Steak

    Preheat a grill or stovetop grill pan over medium-high heat. Season the sirloin steak with salt and pepper. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

    Prepare the Focaccia

    While the steak is resting, slice the focaccia bread in half horizontally. Optionally, you can lightly toast the cut sides on the grill or in a toaster.

Assembly

    Assemble the Sandwich

    Spread the garlic aioli on both halves of the focaccia. Layer the sliced sirloin steak on the bottom half, followed by the smoked cheddar slices. Drizzle with balsamic reduction and top with fresh arugula. Close the sandwich with the top half of the focaccia.

    Serve

    Cut the sandwich in half and serve immediately, with additional balsamic reduction if desired.
