    Prepare the Ingredients

    Grate the gruyere, raclette, and cheddar cheeses. Chop the chives finely and wash the mixed greens.

    Beat the Eggs

    In a bowl, beat the eggs with salt and black pepper until well combined.

Cooking

    Cook the Omelette

    Heat a non-stick skillet over medium heat and add a little butter or oil. Pour the beaten eggs into the skillet and let cook for a few minutes until the edges start to set.
