Preparation

  1. 1

    Cook the meat

In a large skillet over medium heat, add the ground beef and cook until browned. Drain excess fat, then add port wine, salt, and pepper. Cook for an additional 5 minutes until the wine reduces slightly.

  2. 2

    Prepare the spinach

In another pan, sauté the fresh spinach until wilted. Season with salt and pepper, then set aside.

  3. 3

    Make the béchamel sauce

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes to create a roux. Gradually whisk in the milk, continuing to stir until the sauce thickens. Season with salt, pepper, and a pinch of nutmeg.

Assembly and Cooking

  1. 4

    Layer the lasagna

In a baking dish, spread a thin layer of béchamel sauce. Place 3 sheets of lasagna noodles over the sauce. Add half of the meat mixture, half of the spinach, and a layer of mozzarella. Repeat the layers, finishing with noodles and béchamel sauce on top.

  2. 5

    Final touches

Top the final layer with remaining mozzarella and grated Parmigiano-Reggiano cheese.

  3. 6

    Bake the lasagna

Preheat the oven to 180°C (350°F). Bake the lasagna for 30 to 40 minutes, or until the top is golden and bubbly. Let it cool for 10 minutes before slicing.
