Prepare the Fries

Preheat the oven to 425°F (220°C). Wash and peel the russet potatoes, then cut them into thin strips. Soak the fries in cold water for at least 30 minutes to remove excess starch.

Bake the Fries

Drain the fries and pat them dry with a paper towel. Toss the fries in a large bowl with olive oil, salt, black pepper, and garlic powder. Spread them in a single layer on a baking sheet and bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

Prepare the Steak

While the fries are baking, heat a grill or grill pan over medium-high heat. Season the NY strip steaks with olive oil, salt, and black pepper.

Grill the Steak

Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from the grill and let rest for 5 minutes.

Finish the Fries

Once the fries are done, remove them from the oven and immediately sprinkle with Pecorino Romano cheese and chopped fresh parsley.

Slice the grilled steak and serve it alongside the Pecorino fries.
