Chicken and Marinade

Method

Preparation and Cooking

  1. 1

    Marinate the Chicken

In a large bowl, combine buttermilk, hot sauce, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Whisk until well combined. Add the chicken thighs to the marinade and ensure they are fully submerged. Cover and refrigerate for at least 4 hours or overnight for best results.

  2. 2

    Prepare the Hot Oil

In a large skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Fry the Chicken

Remove the chicken from the marinade, allowing excess to drip off. Carefully place the chicken thighs in the hot oil. Fry for about 6-8 minutes on each side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

  4. 4

    Make the Nashville Hot Oil

In a small bowl, mix together additional cayenne pepper (to taste), and a pinch of salt with 1/2 cup of the frying oil. Stir until combined.

  5. 5

    Coat the Chicken

Once the chicken is cooked, remove it from the oil and place it on a wire rack. Brush the Nashville hot oil mixture over the fried chicken to coat it generously.

  6. 6

    Serve

Serve the Nashville Hot chicken on a plate with pickles and white bread on the side, if desired.
