Prepare the Potatoes
Peel the Russet potatoes and cut them into thin strips, about 1/4-inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the potatoes and pat them dry using a clean kitchen towel or paper towels.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry for about 4-5 minutes or until golden brown.

Drain and Season
Using a slotted spoon, remove the fries from the oil and drain them on paper towels. Sprinkle with salt, black pepper, and garlic powder to taste.
