    Prepare the Filling

    In a large bowl, combine the diced apples, brown sugar, and cinnamon. Mix well and set aside.

    Make the Dough

    In a large mixing bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water, one tablespoon at a time, until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.

    Roll Out the Dough

    On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles, approximately 4 inches in diameter.

    Assemble the Empanadas

    Place a spoonful of the apple filling in the center of each dough circle. Drizzle with caramel sauce. Fold the dough over to form a half-moon shape and seal the edges by crimping with a fork.

    Bake the Empanadas

    Preheat the oven to 375°F (190°C). Place the empanadas on a parchment-lined baking sheet. Brush the tops with beaten egg and sprinkle with sugar. Bake for 20-25 minutes or until golden brown.

    Allow the empanadas to cool slightly before serving. Drizzle with additional caramel sauce if desired.
