Israeli Salad

    Prepare the Salad

    In a large mixing bowl, combine the diced cucumber, tomatoes, red onion, and parsley. Drizzle with olive oil and lemon juice, then season with salt and black pepper. Toss to combine and set aside.

Charred Broccoli

    Char the Broccoli

    Preheat your grill or oven to high heat. In a bowl, toss the broccoli florets with olive oil, garlic powder, and salt. Grill or roast for 10-12 minutes until charred and tender.

Potatoes

    Prepare the Potatoes

    Preheat the oven to 425°F (220°C). In a bowl, toss the diced potatoes with olive oil, paprika, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes, or until golden and crispy.

Tzatziki

    Make the Tzatziki

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and salt. Mix well and refrigerate until ready to serve.
