1. Prepare the Cauliflower

Preheat your oven to 400°F (200°C). Rinse the whole cauliflower and remove any leaves from the base.

2. Season

In a small bowl, mix olive oil, salt, and black pepper. Brush this mixture all over the cauliflower, ensuring it is well coated.

3. Roast

Place the cauliflower on a baking sheet and roast in the preheated oven for about 40-50 minutes, or until the outer layer is golden brown and the cauliflower is tender when pierced with a fork.

4. Toast Pine Nuts

While the cauliflower is roasting, toast the pine nuts in a dry skillet over medium heat for about 3-5 minutes, stirring frequently until golden brown. Remove from heat.

5. Serve

Once the cauliflower is done, remove it from the oven and let it cool slightly. Top with toasted pine nuts, pomegranate seeds, and drizzle with schug before serving.
