    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for about 45 minutes or until tender. Remove from heat and let cool.

    Make the Salsa Verde

    In a blender, combine heirloom tomatoes, garlic, parsley, olive oil, lemon juice, red chili flakes, salt, and black pepper. Blend until smooth and set aside.

    Prepare the Potatoes

    Peel and dice the potatoes. In a pot, cover with water, add turmeric powder, and boil until soft. Drain and set aside.

    Char the Octopus

    Once the octopus is cool, cut it into tentacles. Heat a grill or grill pan over medium-high heat. Drizzle with olive oil and grill for about 3-4 minutes on each side until charred.

    Serve

    On a plate, serve the charred octopus over the turmeric potatoes, drizzled with salsa verde.
