Labneh and Tomato Jam

Method

Preparation

  1. 1

    Make the Labneh

In a bowl, mix the plain yogurt, lemon zest, lemon juice, chopped basil, and salt until well combined. Line a sieve with cheesecloth or a clean kitchen towel and place it over a bowl. Pour the yogurt mixture into the lined sieve, cover it with the cheesecloth, and let it drain in the refrigerator for at least 4 hours or overnight for a thicker consistency.

  2. 2

    Prepare the Spiced Tomato Jam

In a saucepan over medium heat, combine the halved cherry tomatoes, olive oil, brown sugar, and red pepper flakes. Cook for about 15-20 minutes, stirring occasionally, until the tomatoes have broken down and the mixture has thickened. Remove from heat and allow to cool slightly.

  3. 3

    Assemble the Dish

Spoon the labneh onto a serving plate. Top with the spiced tomato jam and sprinkle with basil seeds. Serve immediately or chill for a refreshing appetizer.
