Method

Lamb Kofta Burger Preparation

  1. 1

    Prepare the Kofta Mix

In a large bowl, combine ground lamb, chopped onion, minced garlic, parsley, cumin, coriander, paprika, salt, and black pepper. Mix well until fully combined.

  2. 2

    Form the Patties

Divide the mixture into 4 equal parts and shape each portion into a patty.

  3. 3

    Cook the Patties

Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until browned and cooked through.

Tzatziki Preparation

  1. 4

    Mix the Tzatziki

In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Mix until well combined and refrigerate until serving.

Sumac Onion Preparation

  1. 5

    Prepare the Sumac Onions

In a bowl, toss the sliced red onion with sumac, olive oil, and salt. Let it sit for at least 10 minutes to allow the flavors to meld.

Flatbread Preparation

  1. 6

    Make the Dough

In a mixing bowl, combine flour, warm water, olive oil, and salt. Knead until a soft dough forms.

  2. 7

    Cook the Flatbreads

Divide the dough into 4 pieces. Roll each piece into a flat circle. Cook on a hot skillet for 1-2 minutes on each side until lightly browned.
