Method
Lamb Bacon

Preheat Oven
Preheat your oven to 300°F (150°C).

Season Lamb
Combine salt, black pepper, garlic powder, smoked paprika, and brown sugar in a bowl. Rub this mixture all over the lamb belly.

Prepare for Baking
Place the seasoned lamb belly on a baking tray lined with parchment paper. Drizzle with olive oil.

Bake Lamb
Bake in the preheated oven for 2.5-3 hours until the lamb is tender and the fat has rendered. Remove from oven and let it cool before slicing.
Cherry Tomato & Sumac Onion Salad

Mix Salad Ingredients
In a bowl, combine cherry tomatoes and sliced red onion.

Sweet Vinegar Sauce

Cook Sauce
Bring to a simmer over medium heat, stirring until sugar is dissolved. Remove from heat and let cool.
Assembly

Assemble Dish
To serve, place slices of lamb bacon in the romaine lettuce cups, top with cherry tomato and sumac onion salad, drizzle with toum and sweet vinegar sauce.
