Falafel Preparation

Soak Chickpeas

Soak the dried chickpeas in water for at least 8 hours or overnight.

Blend Ingredients

In a food processor, combine soaked chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is finely ground but not pureed.

Chill Mixture

Transfer the falafel mixture to a bowl and refrigerate for 30 minutes.

Form Falafel Balls

Using wet hands, shape the mixture into small balls or patties.

Fry Falafel

Heat olive oil in a deep pan over medium heat. Fry the falafel in batches until golden brown, about 3-4 minutes per side.

Drain and Serve

Remove the falafel from the oil and drain on paper towels. Serve warm with tahina and pickled cabbage.
