    Prepare the Lamb

    In a large pot or Dutch oven, heat the olive oil over medium heat. Season the lamb shoulder with salt and pepper. Brown the lamb on all sides, about 8-10 minutes.

    Sauté Aromatics

    Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 5 minutes.

    Add Tomatoes and Spices

    Stir in the crushed San Marzano tomatoes, cinnamon stick, and chicken broth. Bring to a simmer.

    Braise the Lamb

    Cover the pot and reduce the heat to low. Let the lamb braise for about 2 hours, or until tender.

    Cook the Couscous

    In the last 15 minutes of braising, prepare the couscous according to package instructions using the broth from the pot.

    Prepare the Whipped Feta

    In a bowl, combine crumbled feta with a splash of olive oil and whip until smooth.

    Once the lamb is tender, shred it and serve over the couscous. Top with whipped feta, pomegranate seeds, and chopped mint.
