Prepare the Zucchini

Preheat your oven to 375°F (190°C). Slice the zucchini into 1/2 inch thick rounds and place on a baking sheet lined with parchment paper.

Season the Zucchini

Drizzle the olive oil over the zucchini rounds. Sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss to coat evenly.

Bake the Zucchini

Bake in the preheated oven for 15 minutes, or until slightly tender.

Add Marinara Sauce

Remove the zucchini from the oven and spoon a tablespoon of marinara sauce onto each round.

Top with Cheese

Sprinkle shredded mozzarella cheese generously over the marinara sauce.

Bake Again

Return the zucchini pizzas to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.

Garnish and Serve

Remove from the oven, sprinkle with fresh basil and red pepper flakes if desired. Allow to cool slightly before serving.
