Method
Focaccia Preparation
Make the Focaccia Dough
In a large bowl, combine the flour, yeast, and salt. Gradually add warm water and olive oil. Mix until a dough forms. Knead for about 10 minutes until smooth. Cover and let rise for 1 hour or until doubled in size.
Bake the Focaccia
Preheat the oven to 220°C (425°F). Once the dough has risen, spread it onto a greased baking sheet. Use your fingers to create dimples in the dough. Drizzle with olive oil and bake for 20-25 minutes until golden brown.
Falafel Preparation
Prepare the Falafel Mixture
In a food processor, combine chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms.
Shape and Cook the Falafel
Shape the mixture into small balls or patties. Heat olive oil in a frying pan over medium heat. Fry the falafel for about 3-4 minutes on each side until golden brown. Drain on paper towels.
Assembly
Assemble the Dish
Slice the focaccia in half. Spread tahini on the bottom half, then layer with mixed greens, roasted eggplant, falafel, pickled onions, cherry tomatoes, and fresh dill. Top with the other half of the focaccia.
