Steak Preparation

    Season the Steak

    Season the ribeye steaks generously with salt and black pepper on both sides.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

Frites Preparation

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin strips.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Drain on paper towels and season with salt.

Chimichurri Sauce Preparation

    Mix Ingredients

    In a bowl, combine chopped parsley, cilantro, minced garlic, red wine vinegar, and olive oil. Add red pepper flakes to taste. Mix well and set aside.

Peppercorn Sauce Preparation

    Make the Sauce

    In a saucepan, melt butter over medium heat. Add minced shallots and sauté until translucent. Stir in crushed black peppercorns and cook for an additional minute. Pour in beef broth and simmer until reduced by half. Add heavy cream and season with salt to taste, then cook until the sauce thickens.
