    Prepare the Vegetables

    Chop all the vegetables into bite-sized pieces.

    Cook the Couscous

    In a medium saucepan, bring the vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.

Cooking

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add onions and cook until translucent. Add the remaining vegetables and sauté for about 10 minutes until tender.

    Add Spices

    Stir in cumin, cinnamon, coriander, turmeric, salt, and pepper. Cook for an additional 2-3 minutes to allow the spices to bloom.

    Combine with Couscous

    Add the cooked couscous to the skillet and mix well with the vegetables and spices. Cook for another 2 minutes, stirring gently.

Serving

    Garnish and Serve

    Remove from heat, garnish with fresh parsley, and serve warm.
