Granola Preparation

Preheat Oven

Preheat your oven to 350°F (175°C).

Mix Dry Ingredients

In a large bowl, combine the almond flour, coconut flakes, pumpkin seeds, matcha powder, cinnamon, and salt.

Add Wet Ingredients

In a separate bowl, mix together the maple syrup and melted coconut oil, then pour this over the dry ingredients. Stir until everything is well combined.

Bake

Spread the granola mixture evenly on a baking sheet lined with parchment paper. Bake for 20-25 minutes, stirring halfway through, until golden and crunchy.

Cool and Store

Once done, remove from the oven and let it cool completely. Store in an airtight container.

Assemble Bowl

In a bowl, layer Greek yogurt at the bottom, then top with the matcha granola, mixed berries, and fresh mint leaves.

Drizzle honey over the top to taste.
