Grilled Salmon

    Prepare the Marinade

    In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and black pepper.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes.

    Grill the Salmon

    Preheat the grill to medium-high heat. Grill the salmon for about 5-7 minutes per side, or until cooked through.

Brown Rice

    Cook the Rice

    In a saucepan, bring water to a boil. Add brown rice and salt. Reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender and water is absorbed.

Ratatouille

    Prepare the Vegetables

    Dice the eggplant, zucchini, bell pepper, onion, and tomatoes.

    Cook the Ratatouille

    In a large skillet, heat olive oil over medium heat. Add onions and bell peppers and sauté until softened. Then add eggplant, zucchini, tomatoes, herbs de Provence, salt, and black pepper. Cook for about 20 minutes, stirring occasionally.

Spicy Yogurt Sauce

    In a bowl, mix together Greek yogurt, sriracha sauce, lemon juice, garlic powder, and salt to taste.
