For the Tagine

Method

Cooking the Tagine

    Prepare the Ingredients

    Chop all vegetables and set aside. Cut the chicken, lamb, and sausage into bite-sized pieces.

    Sauté the Meat

    In a large pot or tagine, heat olive oil over medium heat. Add chicken and lamb, browning on all sides. Remove and set aside.

    Cook the Sausage

    In the same pot, add the merguez sausage and cook until browned. Remove and set aside.

    Sauté the Vegetables

    Add onion, carrot, zucchini, bell pepper, and eggplant to the pot. Sauté for about 5 minutes until softened.

    Combine Ingredients

    Return the browned meats to the pot. Add tomatoes, chickpeas, spices, and vegetable broth. Bring to a simmer.

    Add Couscous

    Stir in couscous, cover the pot, and remove from heat. Let sit for 5 minutes to allow couscous to steam.

    Finish and Serve

    Fluff the couscous with a fork, stir in chopped parsley, and season with salt and pepper. Serve warm.
