Preparation of Coq Au Vin

Prepare the Ingredients
In a large bowl, marinate the chicken pieces in red wine for at least 2 hours, preferably overnight. Drain and reserve the wine.

Cook the Pancetta
In a large Dutch oven, heat olive oil over medium heat. Add the diced pancetta and cook until crispy. Remove and set aside.

Brown the Chicken
In the same pot, add the chicken pieces and brown them on all sides. Remove the chicken and set aside.

Combine Ingredients
Add the reserved wine, chicken broth, bay leaves, thyme, pancetta, and chicken back to the pot. Bring to a simmer.

Braise
Cover and reduce heat to low. Braise for about 2 hours, or until the chicken is tender.

Season
Taste and season with salt and black pepper as needed.
