    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot and cook according to instructions. Once cooked, let it sit covered for 10 minutes, then fluff with a fork.

    In a bowl, combine diced tuna, soy sauce, sesame oil, and minced black garlic. Mix well and let it marinate in the refrigerator for at least 15 minutes.

    In a separate bowl, mix the rice vinegar, sugar, and salt until dissolved. Add the thinly sliced cucumber and let it sit for 10 minutes to pickle slightly.

    In a small bowl, mix mayonnaise and wasabi paste until well combined. Adjust the wasabi to taste.

    In a serving bowl, layer the sushi rice as the base. Top with marinated tuna, pickled cucumber, pickled ginger, and a drizzle of wasabi aioli. Sprinkle furikake seasoning over the top.
