    Prepare the Halloumi

    Slice the halloumi cheese into 1/2-inch thick slices. Heat the olive oil in a non-stick skillet over medium heat. Fry the halloumi slices for about 2-3 minutes on each side, or until golden brown and crispy.

    Segment the Citrus

    While the halloumi is cooking, peel the citrus fruits and segment them by cutting between the membranes to release the juicy segments. Set aside.

    Warm the Pita

    Wrap the pita bread in aluminum foil and place it in the oven at 350°F (175°C) for 10 minutes or until warm.

    Assemble the Plate

    On a serving platter, spread a generous amount of hummus. Arrange the fried halloumi slices on top and sprinkle the citrus segments around. Drizzle with olive oil, and season with salt and black pepper.

    Garnish with fresh parsley if desired. Serve immediately with warm pita on the side.
