Preparation Steps

  1. 1

    Prepare the Crostini

Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch thick pieces and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt. Bake for 8-10 minutes or until golden and crisp.

  2. 2

    Make the Drawn Butter

In a small saucepan, melt the butter over low heat. Once melted, remove from heat and let it cool slightly. Stir in finely chopped fresh herbs and set aside.

  3. 3

    Prepare the Fried Olives

In a small skillet over medium heat, add a little olive oil and the sliced olives. Cook for about 3-4 minutes until they are warmed through and slightly crisp. Remove from heat.

  4. 4

    Assemble the Ricotta Cilbir

In a serving dish, spread the ricotta cheese evenly. Drizzle the drawn butter with herbs over the top. Crumble the cured egg yolks over the ricotta, then add the fried olives on top. Season with black pepper to taste.

  5. 5

    Serve

Serve the Ricotta Cilbir with the crostini on the side for dipping.
