Filet Mignon

Whipped Butter Potatoes

Grilled Asparagus

Beet Bordelaise Sauce

Method

Cooking Filet Mignon

  1. 1

    Preparation

Let the filet mignon steaks sit at room temperature for 30 minutes before cooking. Season both sides with salt and black pepper.

  2. 2

    Searing

Heat olive oil in a skillet over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side, or until desired doneness.

  3. 3

    Resting

Remove from heat and let the steaks rest for about 5 minutes before serving.

Whipped Butter Potatoes

  1. 4

    Boiling Potatoes

Peel and cut the russet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain.

  2. 5

    Whipping

In a bowl, combine the potatoes with butter, heavy cream, salt, and black pepper. Whip until smooth and creamy.

Grilled Asparagus

  1. 6

    Preparing Asparagus

Trim the asparagus ends and toss with olive oil, salt, black pepper, and lemon zest.

  2. 7

    Grilling

Grill the asparagus on medium heat for about 5-7 minutes, turning occasionally, until tender.

Beet Bordelaise Sauce

  1. 8

    Sautéing Shallots

In a saucepan, melt butter over medium heat and sauté the chopped shallots until translucent.

  2. 9

    Simmering Sauce

Add beet juice and red wine, and bring to a simmer. Cook until reduced by half, about 15 minutes. Season with salt and black pepper.
