Sorbet Preparation

    Prepare the Sorbet Base

    In a blender, combine the fresh fruit of your choice, sugar, lemon juice, and water. Blend until smooth. Pour the mixture into a container and freeze for at least 4 hours or until firm.

    Blend the Sorbet

    Once the sorbet base is frozen, remove it from the freezer and let it sit for about 10 minutes to soften. Use a fork to scrape and fluff the sorbet before serving.

Coulis Preparation

    Make the Fruit Coulis

    In a small saucepan, combine the fresh fruit, sugar, and lemon juice. Heat over medium heat until the fruit breaks down and the mixture thickens, about 10-15 minutes. Strain through a fine mesh sieve if desired, then cool.

Crumble Preparation

    Prepare the Crumbled Pepitas

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine pepitas, olive oil, maple syrup, and cinnamon. Spread the mixture on a baking sheet and toast in the oven for 10-12 minutes until golden. Let cool and crumble.
