    Prepare the Yams

    Peel and chop the garnet yams into small cubes. Boil them in salted water until tender, around 15 minutes. Drain and set aside.

    Make the Muhammara

    In a food processor, blend the toasted walnuts, preserved lemon, olive oil, and spices until smooth. Adjust seasoning with salt and pepper to taste.

    Cook the Salmon

    Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season the salmon fillets with salt, pepper, and sumac. Place the salmon in the pan skin-side down and sear for 4-5 minutes until crispy. Flip and cook for an additional 3-4 minutes until cooked through.

    Finish the Dish

    In a bowl, combine the cooked yams with fresh mint, dill, and toasted cumin. Plate the yams, top with the salmon, and drizzle with the Muhammara sauce. Garnish with additional herbs and walnuts if desired.
