Preparation and Cooking

    Marinade the Steak

    In a bowl, whisk together the olive oil, fresh thyme, salt, black pepper, and cherry tomatoes. Add the hanger steak and coat well. Cover and marinate in the refrigerator for at least 1 hour.

    Cook the Potatoes

    Boil the creamer potatoes in salted water until fork-tender, about 15-20 minutes. Drain and toss with vinegar and a pinch of salt.

    Grill the Steak

    Preheat the grill to medium-high heat. Remove the steak from the marinade, allowing excess marinade to drip off. Grill the steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing.

    Prepare the Salad

    In a large bowl, combine baby kale and blue cheese. Drizzle with olive oil and toss gently to combine.

    Slice the grilled hanger steak and serve alongside the vinegar creamer potatoes, baby kale blue cheese salad, and drizzle with veal demi-glace.
