Prepare the Gelato Base
In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, vanilla extract, and salt. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

Chill the Base
Remove from heat and let the mixture cool to room temperature. Once cooled, refrigerate for at least 2 hours or overnight to let the flavors meld.

Churn the Gelato
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze
Transfer the gelato to an airtight container and freeze for at least 4 hours to firm up.
