    Prepare the Duck

    Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and pepper.

    Cook the Duck

    Heat a skillet over medium heat and place the duck breasts skin-side down. Cook for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-6 minutes for medium-rare. Remove from heat and let rest.

    Make Duck Confit

    In the same skillet, add black bean sauce and hoisin sauce to the drippings. Stir to combine, then add the rested duck breasts back to the pan, coating them in the sauce for 2-3 minutes. Remove and slice.

    Prepare the Bao Buns

    Steam the bao buns according to package instructions until fluffy (about 8-10 minutes).

    Assemble the Dish

    Slice the scallions thinly. In each bao bun, add slices of the hoisin duck, a sprinkle of black sesame seeds, scallions, and a dollop of pickled ginger. Drizzle with peanut sauce to taste.
