Prepare the Mushrooms
Clean the mushrooms with a damp cloth and remove the stems if desired. Set aside.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and somewhat thick.

Heat the Oil
In a deep skillet or frying pan, heat the oil over medium-high heat until hot (around 350°F or 175°C).

Fry the Mushrooms
Dip the mushrooms into the batter, ensuring they are coated well, then carefully place them in the hot oil. Fry in batches until golden brown, about 3-4 minutes per batch.

Drain and Serve
Remove the mushrooms with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot with herbed tahini sauce, garnished with sliced green onions, a drizzle of local honey, toasted seeds, and a squeeze of lime juice.
