Preparation Instructions
1. Cook the Grains
In a medium pot, bring 2 cups of water to a boil. Add the heirloom grains, reduce heat to low, cover, and let simmer according to package instructions (usually about 15-20 minutes). Once cooked, drain and set aside to cool.
2. Prepare the Salad
In a large bowl, combine the cooked grains, fresh spinach, diced avocado, fontina cheese, and halved cherry tomatoes.
3. Make the Dressing
In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
4. Combine and Serve
Pour the dressing over the salad and gently toss to combine. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld.
