Cocktail

Method

Cocktail

  1. 1

    Prepare glass

Rub a lime wedge around the rim of a rocks glass. Dip the rim lightly into smoked salt so it adheres. Fill the glass with fresh ice and set aside.

  2. 2

    Combine ingredients

In a cocktail shaker, add 1.5 oz Bozal mezcal, 0.5 oz Tanteo jalapeño tequila, 0.75 oz prickly pear syrup (or puree), 0.75 oz fresh lime juice, and 0.25 oz agave syrup if you prefer slightly sweeter balance.

  3. 3

    Ice and shake

Add about 1 cup of ice to the shaker. Shake vigorously for 12–18 seconds until the outside of the shaker is cold and well chilled.

  4. 4

    Double-strain into glass

Double-strain the cocktail into the prepared rocks glass over the fresh ice. Double-straining (using a Hawthorne and fine mesh strainer) ensures a smooth drink with no large pulp or ice shards from the shaker.

  5. 5

    Garnish

Express a lime wheel over the drink to release oils, then place it on the rim or float it on top. Optionally add a thin slice of jalapeño if you want extra visual heat.

Optional Flamed Orange Smoke (for presentation)

  1. 6

    Prepare orange peel

Cut a wide strip of orange peel (no pith if possible). Hold the peel with the colored side facing the drink.

  2. 7

    Add spirit and ignite carefully

Using a small spoon or dropper, place 0.25 oz of high-proof spirit on the flesh side of the peel. Carefully use a long lighter to briefly ignite the spirit; quickly squeeze the peel so a burst of flaming citrus oil arcs through the flame and over the cocktail, creating a smoky, aromatic overlay. Extinguish any remaining flame and discard the peel safely.

  3. 8

    Safety notes

Perform the flame step over a non-flammable surface, away from flammable materials, hair, and clothing. If you are not comfortable with open flame, skip this step — the cocktail is excellent without it.
