Preparation

1. Chill glass

Place a large beer glass in the freezer or fill with ice water for 5 minutes to chill while you prepare the cocktail components.

2. Juice oranges/lemons

If using fresh fruit, squeeze the orange and lemon to yield the required juice amounts. Strain out pulp if desired for a cleaner finish.

3. Combine small ingredients

In a cocktail shaker, add the orange liqueur (0.25 oz), fresh orange juice (0.5 oz), fresh lemon juice (0.25 oz), simple syrup (0.25 oz) and 2 dashes Angostura bitters. Fill the shaker with ice and shake vigorously for 8–10 seconds until well chilled and slightly diluted.

4. Strain into glass

Remove the ice or water from the chilled beer glass (if used). Strain the shaken citrus-liqueur mixture into the bottom of the glass.

5. Add the beer

Slowly pour 12 oz chilled UFO Hefeweizen (or other wheat beer) into the glass over the back of a spoon or down the inside of the glass to preserve head and gently lift the citrus base into the beer so the flavors marry without excessive foam.

6. Float the whisky

Using a bar spoon, slowly pour 0.5 oz blended Scotch (or light bourbon) over the back of the spoon so it floats on top of the beer. This creates a layered ‘UFO’ effect and a boozy aroma on the surface.

7. Garnish and finish

Express the oils of an orange twist over the surface and drop an orange wheel or twist onto the rim. Optionally give the drink a gentle stir (1–2 turns) with a bar spoon if you prefer more integration of the float.

Serve

8. Serve immediately while the beer is fizzy and the whisky float is distinct. Sip through the layers to experience citrus, wheat-beer body, and the smoky/sweet whisky top notes.
