Preheat the Oven
Preheat your oven to 375°F (190°C).

Cook the Lasagna Noodles
Boil a large pot of salted water. Cook the lasagna sheets according to package instructions until al dente. Drain and set aside.

Prepare the Cheese Mixture
In a bowl, mix ricotta cheese, salt, black pepper, chopped spinach, and diced hatch green chiles until well combined.

Assemble the Lasagna
In a greased 9x13 inch baking dish, spread a thin layer of alfredo sauce on the bottom. Place 3 lasagna sheets over the sauce. Spread half of the ricotta mixture on top, followed by half of the mozzarella cheese. If using, add a layer of the cooked sausage or chicken. Repeat the layers: another layer of alfredo, lasagna sheets, remaining ricotta mixture, remaining mozzarella, and finish with a final layer of lasagna sheets topped with the remaining alfredo sauce.

Bake the Lasagna
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Let the lasagna cool for a few minutes before slicing. Serve warm and enjoy!
